History

For our family the discovery of the twice baked potato casserole was made in late 2000 and we have been prepare it on a regular basis. Twiced baked potato casserole was originally posted on "Quick Cooking" in Nov/Dec 1999 on page 57.

baked potato, or jacket potato, is the edible result of baking a potato. When well cooked, a baked potato has a fluffy interior and a crisp skin. It may be served with fillings and condiments such as butter, cheese or ham. Potatoes can be baked in a conventional gas or electric oven, a convection oven, a microwave oven, on a barbecue grill, or on/in an open fire.

This is also a really good example of how the English language changes over time. One of the things I noticed is that nearly every cookbook published before 1900 refers to potato skins as “jackets.” Interesting, isn’t it, that we’ve moved from a clothed reference to a naked one!
