Directions for making Twice baked potato casserole.

  1. Preheat oven to 350°, cook the bacon until crispy and drain the grease. Then wash the potatoes with clean water.
  2. Using a microwave cook the potatoes on high for 15 minutes.
  3. Cut baked potatoes into 1 inch cubes. (1-1/2 pounds red potatoes)
  4. Place half in a greased 13x9-inch baking dish.

  6. Sprinkle with half of the salt, pepper and bacon.
  7. Top with half of the sour cream and cheeses.
  8. Repeat layers.
  9. Bake, uncovered, 20-25 minutes or until cheeses are melted.
  10. Sprinkle with onions.
  11. Yield: 6-8 servings.
